Eggplant Parmesan with a Twist

Serves 4
  • Approx 1/2 cup Olive Oil for browning
  • 1 large eggplant, peeled and slice 1/2 inch
  • 2 cups Italian flavored bread crumbs
  • 2 eggs, whisked with 1 tbs milk
  • 1/2 lb sliced Fortuna's Mortadella
  • 1/2 lb shredded Mozzarella
  • One 1lb container or Ricotta cheese
  • 8 oz baby spinach or swiss chard sauted and drained
  • 4 cloves of garlic, sliced
  • Fortuna's Pasta Sauce 1 jar
Cut and dip eggplant in egg, then coat with bread crumbs. Fry each side in olive oil until golden. Remove and place on paper towel while preparing other ingredients. Brown garlic in 1 tbs olive oil. Add baby spinach and saute until softened. Set aside. Layer pieces of fried eggplant in baking pan, add layer of sliced mortadella and a few dollops of ricotta cheese, mozzarella and a light layer of pasta sauce and repeat with another layer until about 3-4 layers high Top with cheese and bake at 375 degrees for 20 minutes, until the cheese is melted.
