Lonza, air cured pork loin

Lonza is an air-dried cured pork loin seasoned with a bit of black pepper & fennel. Extremely lean, you must slice lonza paper-thin and add a generous dose of extra-virgin olive oil in order to fully bring out its rich flavor. Very lean and tender, it's been described as "the sister to prosciutto." A must for your charcuterie board!

Each hand cut piece is approx 1 lb.

    The meat was tender. I tried two ways to slice, real thin and slightly thicker, preferred the thinner. I will buy again.

    First: ordering was easy, shipping and delivery was great. Second: I grew up eating Lonza, it was a delicacy and something I crave all the time, living in GA, it is impossible to find locally and I was very excited to find a place that ships it across the US. When I opened the package I realized how soft it was, it looked like it needed another year of curing, and the taste was awful, we ended up throwing it away.

    Less salty compared to other cured meats. Nice topping for flat breads and accompaniment with cheese platters. Wish I had a way to cut it paper thin.

    Quality on par with their capicola; outstanding. Like a lean prosciutto, with an aroma nearing capicola.

    Not what I expected

    Probably my ignorance but I was expecting something way different. I did not like it cold and sliced thin so I tried heating it some and then the salt came out. Way to salty for me no a low sodium diet. My mistake.

    Very good, the label was totally smudged so at first, had no idea what the package was but didn’t impact the Lonza which is great
