A dry cured, dense, and flavorful sausage. We use a fine grind of pepper, very lean pork and a slightly different drying process than its sister sausage, the traditional sopressata. Fortuna's SOUPY® aka SUPRI®, Soupie an Old World tradition that was brought here from Italy hundreds of years ago and was passed down from generation to generation, originating in Calabria, Italy. Like many other fine arts it is a dying tradition. At Fortuna's we have taken our old family recipe and resurrected the fine art of making dry-cured sausages and salami. Each stick is hand-made, from the precise trimming of the pork, to stuffing it into casings* and tying then hung to air dry for 8-10 weeks.

Our family were graced with home made similar sausage/salami for many years, but the person who made passed on. Then my airline pilot brother found Fortuna's on a lay-off. We have all enjoyed and shared it for 10 to twenty years as the nearest in flavor and quality as our original.

If I could rate Fortuna's at a 10 I would. The level of all products is of the highest quality. Patty and her team create an amazing experience that will take you to Italy the moment you bite into a cheese or meat that Fortuna's sell. My father made The Sop for years prior to passing away and I have never tasted one like his and I am now able to remember his craft all over again!
