SHIPPING NOTES 2026
We've been committed to product freshness for 3 generations.
The Fortuna Family would like to assure you that we take great pride in our products and would not compromise our salami, coppa, cheese, or any of our products in any way during shipping, since they are naturally dry-cured or aged, as in the cheese, and have very low moisture content, which makes them resilient during shipping. Unlike commercial, mass-produced brands, Fortuna’s salami and hard cheese can not spoil.
We are committed to the safe, prompt arrival of all Fortuna’s items.
During the summer months, we will wrap in insulated packaging and frozen gel packs if t destination requires it, then ship via 2-day air at our expense. This process has been tested and proven to keep product fresh for at least 48 hours or longer, even if the ice pack softens or defrosts; the product stays on ice for most of the trip to you. Most of Fortuna’s products DO NOT require refrigeration until they are received at your home. In some cases, the cheese may soften and release oils; this is common with aged cheese. The product is perfectly fine and not spoiled; refrigerate the cheese for a few hours, and it will be fine for you and your family to enjoy. Any questions? Email us at the address below.
Please note: We cannot process returns or refunds without the product and packaging, so please do not discard the product or packaging until after you have communicated with us. We may ask you to return it or provide photos.
Storage & Serving: Once opened, rewrap well in wax or plastic wrap and store in an airtight container or a zip-lock bag in the refrigerator.
Most importantly, when you are ready to eat the cheese or salami, unwrap it and let it come to room temperature for the best flavor. Do not let it sweat in the bag or wrap; this will cause excess moisture and mold.
Expiration Dates: The “Best buy” date is just a guideline. If stored properly, the cheese and salami will be fine well beyond this date, again because they are cured and/or aged.
If you have any questions, please email or call; I’m always happy to hear from you.

How do I slice my salami?
First, cut the end (especially if there is still twine attached to your salami). Then cut a straight, shallow slit down the length of the salami. Peel back the edges of the casing, and pull back to the point where you will be slicing to. It is now ready to be sliced and served. We recommend slicing and serving at room temperature to make it easier to cut thin and taste the full flavor. For charcuterie/antipasto plates we recommend cutting them into small, round pieces. You can always cut them vertically for sandwiches. After cutting store in plastic bag in refrigerator.
Does "uncured" mean it needs cooking? - Absolutely not, uncured just means it is all natural and nitrate free. Our Pepperoni is marked uncured as directed by the USDA but it is ready to eat directly out of the package. Rumor has it since so many products are going nitrate free now that this may change in the near future
How long does this product last?
All of our dry cured products are shelf stable and do not require refrigeration until opening. Unrefrigerated cured meats last approximately 3 months, refrigerated they last 6-9 months. Coppa's shelf life is 3-6 months and should be stored in the refrigerator upon arrival. We also recommend refrigerating cheeses & olives upon arrival.
Can I put my salami in the freezer?
The only products we recommend freezing is fresh rope sausage and bacon. Freezing cured meats and aged cheeses diminish the flavor and alter the texture. To ensure the best quality please only cool in the refrigerator.
Where are you located?/Where can I buy your products?
We are an online only Italian Market but we sell to quite a few gourmet markets across the USA. If you have a market you'd like us to contact please send Patti@fortunasausage.com an email and we will contact them.
Is this white mold on my salami?
No. Sometimes salt from the curing process collects on the outside of the casing. You can rinse off the residue or simply remove the casing.
How do I use salami in a dish?
The most simple way to serve salami is in a charcuterie plate, sandwich or just as is. But there are endless possibilities! Take a look at our recipe page here.
