How do I slice my salami?
First, cut the end (especially if there is still twine attached to your salami). Then cut a straight, shallow slit down the length of the salami. Peel back the edges of the casing, and pull back to the point where you will be slicing to. It is now ready to be sliced and served. We recommend slicing and serving at room temperature to make it easier to cut thin and taste the full flavor. For charcuterie/antipasto plates we recommend cutting them into small, round pieces. You can always cut them vertically for sandwiches. After cutting store in plastic bag in refrigerator.

Does "uncured" mean it needs cooking? - Absolutely not, uncured just means it is all natural and nitrate free. Our Pepperoni is marked uncured as directed by the USDA but it is ready to eat directly out of the package. Rumor has it since so many products are going nitrate free now that this may change in the near future


How long does this product last?
All of our dry cured products are shelf stable and do not require refrigeration until opening. Unrefrigerated cured meats last approximately 3 months, refrigerated they last 6-9 months. Coppa's shelf life is 3-6 months and should be stored in the refrigerator upon arrival. We also recommend refrigerating cheeses & olives upon arrival.


Can I put my salami in the freezer?
The only products we recommend freezing is fresh rope sausage and bacon. Freezing cured meats and aged cheeses diminish the flavor and alter the texture. To ensure the best quality please only cool in the refrigerator.


Where are you located?/Where can I buy your products?

Is this white mold on my salami?
No. Sometimes salt from the curing process collects on the outside of the casing. You can rinse off the residue or simply remove the casing.


How do I use salami in a dish?
