Italian Style Pancetta , made in the USA
Produced from fresh, hand selected, trimmed pork bellies that are cured and seasoned with freshly cracked black pepper producing a marbled, tender finished product. Sold by the piece. One piece is approximately 2 inches thick
Hand cut approx 3/4 lb. piece

Serves 4-6
- 1/2 lb diced Pancetta, coppa or guanciale
- 2 cloves chopped fine garlic
- 2 eggs
- 1 1/2 cups of Sunday Blend
- Olive oil
- Salt and black pepper
- 1 lb Spaghetti, fettuccine or buccatini

Pancetta
I love this pancetta and have been using it for a while. Recently I used it in Anthony Bourdain's rendition of French onion soup from his Les Halles cookbook. It was one of the best things I have ever made.
