It is the perfect ingredient for many traditional first and second courses. Some examples? It can be breaded alla milanese , grilled on a hotplate, diced in salads, antipasto platter our favorite with a crostini and a piece of salami

These Auricchio provolone bells are music to my palate and are reminiscent of the wonderful Italian provolone I enjoyed while in Italy years back.
I am so happy to have Fortuna's S&IM as a supplier of these wonderful cheeses. Living on the West Coast, it is very difficult to find good imported provolone and Fortuna has the inventory, their provolone is well-priced, and they ship out quickly.
