Our truffle butter is a rich, artisanal Italian condiment made by Sassone Tartufi in Calabria Italy, combining high-quality dairy butter with fragrant white / Bianchetto truffles. It serves as a ready-to-use gourmet enhancer for hot pasta, risottos, meats, and of course on crostini. Shelf stable until opened
- Base: Real creamy butter infused with authentic white truffle pieces and natural flavorings.
- Varieties: Frequently features white truffles or Bianchetto truffle (Tuber borchii).
- Texture: Smooth, spreadable, for easy melting.
- Pasta & Risotto: Stir directly into warm spaghetti, tagliatelle, or finished risotto just before serving.
- Breads: Spread on toasted crusty bread, crostini, or warm bruschetta.
- Proteins & Sides: Melt over cooked steaks, fish fillets, roasted potatoes, or scrambled eggs.
- Pasta: 8 oz (225g) fresh tagliatelle
- Fat: 3 tbsp Sassone truffle butter.
- Cheese: 1/2 cup freshly grated Parmigiano-Reggiano.
- Liquid: 1/2 cup reserved hot pasta water.
- Seasoning: Freshly cracked black pepper and sea salt.
- Boil: Cook pasta in salted boiling water until al dente.
- Reserve: Save 1/2 cup of pasta water before draining.
- Melt: Turn off heat, add truffle butter to the hot pot.
- Toss: Add pasta, grated cheese, and half the pasta water.
- Emulsify: Toss vigorously until a creamy sauce coats the taglietelle
- Adjust: Add more pasta water if the sauce looks dry.
- Serve: Plate immediately with extra cheese and black pepper and extra sliced truffle if you'd like!
