Ubriaco Cabernet Cheese - Imported from Italy

Ubriaco , a cow's milk cheese from the Treviso region of Italy. This is a semi-hard raw cow’s milk cheese that is aged for six months and then immersed in Cabernet / Merlot grape must for weeks to develop its flavor and aroma and color. The cheese has a light yellow color and fruity taste with a spicy finish.

The translation of Ubriaco is "drunken" and the Cabernet and Merlot grapes must was used to preserve the cheese before modern methods were invented. This tradition is thankfully still carried on. The purple-colored rind is stunning on a plate surrounded with olive oil crackers, olives and perhaps some thin slices of genoa salami.

    Just live the Ubriacio cheese! If you want to add a flavor that can hold its own against garlic and oregano, this is it! Great subtle fermented (wine/Beer) taste!!! Highly recommend!!!!

    It is fruity, really excellent. I am going to order some more. I have my "regular" favorite but now, this one adds up to it. It is very-very good
