A dry cured, dense, and flavorful sausage. We use a fine grind of pepper, very lean pork and a slightly different drying process than its sister sausage, the traditional sopressata. Fortuna's SOUPY® aka SUPRI®, Soupie an Old World tradition that was brought here from Italy hundreds of years ago and was passed down from generation to generation, originating in Calabria, Italy. Like many other fine arts it is a dying tradition. At Fortuna's we have taken our old family recipe and resurrected the fine art of making dry-cured sausages and salami. Each stick is hand-made, from the precise trimming of the pork, to stuffing it into casings* and tying then hung to air dry for 8-10 weeks.

    SOUPY to the rescue!

    Not knowing what to send to my brother for Christmas was always a dilemma. He’s a retired veteran and he & his wife aren’t in need of much. I wanted something they could enjoy during the cold months ahead. Something different that they would not come across during their grocery & basics shopping out there in Colorado. SOUPY to the rescue! We were so glad to quickly log onto the website & order a soupy to head their way. So simple when Patti Fortuna and the Fortuna Sausage & Italian Market Family are on the job! They take care of the handling, packaging and shipping in a jiffy. My brother’s package arrived as scheduled (even though there was a storm out there that delayed other gifts headed that way). They enjoyed their gift with friends while celebrating over the holidays! 🎄

    if you like your salami on the hot side this is the one for you. it is hot but not too hot. I believe anyone who is a fan of spice will like this one.
