Coppa - Dry Cured Capicola aka Gaba-gool
Hot or Sweet - Whole Piece 1.75-2.00lbs
"BEST AMERICAN MADE COPPA" by Wall Street Journal
COPPA, a dry-cured capicolla, is a boneless pork shoulder that is hand rubbed with spices and dry-cured for months. Coppa is similar in texture to Prosciutto and should be sliced as thinly as possible to capture its genuine tenderness. It has a rich, earthy flavor that will melt your taste buds. Shelf life is 3-6 months refrigerated.
Serving hints: Slice thinly for sandwiches or panini, roll on an antipasto platter, or serve with sharp provolone; add it to your pasta sauce, diced for a unique flavor, or even to a frittata. Use anywhere you have used Prosciutto or Pancetta.

Gabagool!
Great product. Slice thin and wrap around Auricchio provolone. A glass of wine with it and it's Heaven.

dry cured soppa
coppa was very good. Gave half of my order to friend who owns an Italian restaurant here in town. his comments were favorable as well

Good eating
I like Capicola. First tried on a JJ sandwich. This of course is best very thinly cut as it can be a tad chewy. Frying made it too salty but once in a while it is good to try it that way. I like it.

not a quality product, not worth the money.
unlike my review for the mortadella made in italy 5 star review, this product made in the U.S. is not a quality product, not recomended ,the meat is tuff, and is more solid fat then meat, also i found another company on the internet that sells coppa from italy that is more expensive but worth the money, and when i purchased a coppa made in the U.S. was also tuff and more solid fat then meat, but that company without any pictures from me to show the issue ,sent me a diferent copa that was better no charge and free S&H,that coppa was a 3 star review, the i purchased several large orders after that including a coppa from italy they sell that i gave a 4 star rating, that company stands behind there products, this company does not,be aware of that,if the coppa was sold in halfs not 1 solid piece and i saw the lack of quality i would have never bought this coppa for $25 plus $12 S&H,I DO NOT RECOMEND THIS PRODUCT,
