Primo Sale Cheese with Red Pepper

Primo Sale is an Italian, sheep milk cheese primarily produced in the islands of Sicily or Sardinia. The name itself literally means “first salt" and is used to describe early stages of the aging process. The curds for this cheese are put into baskets and aged for 30 days giving the white outside crust a basket imprint because the cheese is young, it has a bright white color and milky in flavor. It is a rind-less cheese that is semi-soft in texture, almost a rubbery texture.

Primo Sale (first or young salt) is a young Sheep’s milk cheese traditionally made in Sicily.     It was a bit dry but still good. For goat cheese, it wasn’t very tangy. I might buy it again.
