A dry cured, dense, and flavorful sausage. We use a fine grind of pepper, very lean pork and a slightly different drying process than its sister sausage, the traditional sopressata. Fortuna's SOUPY® aka SUPRI®, Soupie an Old World tradition that was brought here from Italy hundreds of years ago and was passed down from generation to generation, originating in Calabria, Italy. Like many other fine arts it is a dying tradition. At Fortuna's we have taken our old family recipe and resurrected the fine art of making dry-cured sausages and salami. Each stick is hand-made, from the precise trimming of the pork, to stuffing it into casings* and tying then hung to air dry for 8-10 weeks.

    Not like Westerly, RI Soupy

    I grew up around the Westerly, RI area where Soupy is a community staple every winter. Every family claims there's is the best but they are ALL similar in texture and quality. Due to COVID my local connection was out of supply and I decided to try Fortuna. I ordered 4 sticks and have to be honest, It is NOT like Westerly, RI Soupy at all. The flavors are somewhat familiar but the cure, texture, and grind is not at all close. Fortuna's Soupy is extremely moist (almost wet). It's a stark contrast where Westerly soupy is heavily cured and dry. Visually, Fortuna Soupy is bright and looks closer to a stick of pepperoni whereas Westerly soupy is dark and often covered in patches of dried salt from the curing. If your looking for that regional authenticity, your better often making a trip and getting local Soupy made where the Calabrese tradition is alive and well.

    Got to my mailbox ahead of time, and this soupie is so good it's sick in the head. Most soupies are bone-dry and can double as a weapon, Fortuna's is more tender and meatier. Some, like oh, I don't know, "BOAR'S HEAD" - are slick, oily fatty flavorless garbage. I CHALLENGE anybody to do a taste test. I did. And now it's Fortuna's all the way, baby!
