Lonza del Inferno, spicy air cured pork loin
Lonza is an all natural and nitrate free air-dried cured pork loin seasoned with a bit of black, red pepper & fennel. Extremely lean, you must slice lonza paper-thin and add a generous dose of extra-virgin olive oil in order to fully bring out its rich flavor. Very lean and tender, it's been described as "the sister to prosciutto." A must for your charcuterie board!
Each hand cut piece is approx 1 lb.
