Chicken soup during this flu season-cure all!
CHICKEN SOUP IS GOOD FOR YOUR SOUL
Do you need to make a pot of chicken soup for your sick children or neighbors? It's so easy and no right or wrong way -it's just how you like it!
1 lb chicken thighs with skin and bones for flavor
6 peeled and chopped carrots
5 stalks chopped celery
1/2 small onion chopped
Spinach , kale or escorole if you like greens like I do.
Grated cheese , salt and pepper to taste.
1/2 lb small pasta, pastina - cooked and cooled and set aside to add to each bowl so it so doesn't over cook
After chicken is tender and falling off the bone , put back in a bowl and pull apart and throw bones away and re-add to pot of soup
Rinse and put all chicken in a soup pot with water about 8 cups or more
Bring to a soft boil , add celery, onions, carrots and let it simmer for an hour or so , put a cover on pan. mostly covered so broth doesn't evaporate. If you need to add more store bought chicken broth works well.
Cook and cold bath pasta of your choice and set aside and add to bowl of soup as serving .
If you're adding greens feel free to add directly in the pot of soup and cook
Season with grated cheese, salt and pepper
