HONEY CORN MUFFINS , great with BBQ Ribs
HONEY CORN MUFFINS
¾ cup flour
1 ¼ teaspoons baking powder
½ teaspoon salt
1/3 cup cornmeal
¼ cup diced raw apple
¼ cup our own Vermont pure honey
1 well beaten egg
1/3 cup sour cream
3 tablespoons melted shortening or butter
Preheat oven to 400 degrees. Sift flour, baking powder and salt together. Add cornmeal.
Combine beaten egg, sour cream, honey, and melted butter or shortening. Add all at once to flour/cornmeal mixture.
Stir only enough to dampen all the flour. Fold in the dice apple.
Bake in well-greased muffin tins. Bake 20 minutes or till done. Yields 8-12 muffins.
Drizzle with honey before serving
