Zucchini with Calabrese Pancetta
We all have more zucchini than we can eat and need to be creative instead of boring.
So I took some of our Calabrese Pancetta and diced it small and sauted for a couple minutes with a little olive oil .
Then diced up 3 small zucchini and added to the pancetta and let cook on low for about 20-30 minutes- until the zucchini was tender but not over cooked. That's it!!!!
