COPPA, a dry-cured capicolla, is a boneless pork shoulder that is hand rubbed with spices and dry-cured for months. Coppa is similar in texture to Prosciutto and should be sliced as thinly as possible to capture its genuine tenderness. It has a rich, earthy flavor that will melt your taste buds. Shelf life is 3-6 months refrigerated.
Serving hints: Slice thinly for sandwiches or panini, roll on an antipasto platter, or serve with sharp provolone; add it to your pasta sauce, diced for a unique flavor, or even to a frittata. Use anywhere you have used Prosciutto or Pancetta.

Funky and delicious
No comparison to the run of the mill deli stuff. This is the real thing with a deep tang from the aging process. Maybe not for everyone but it’s the stuff for me. The flavor is intense as it should be. Not meant to be piled an inch thick on a sandwich but rather to be eaten in small amounts as part of a beautiful antipasto. Buonissimo e fantastico! Bravo Fortuna! I hope to visit in person some day.

Tryed this and thought it would be mouth watering like the ad, but very disappointing that it was very fatty and hard to eat. But it looked so good now I know.
