Provolone Piccante - Sharp Imported from Italy

Imported Provolone from Italy. Extra sharp and perfectly aged. Provolone piccante is aged for a longer period of time and has a stronger, sharper taste.

Wonderful in antipasto, with any of our salamis or just on crackers. It originated in the southern region of Basilicata but is now produced all throughout the country. The curd is heated using hot water until it becomes stringy and then formed into its distinguishable shape. It is then dipped in brine, coated in wax, and hung to age. Then hung to age for year or longer

    Just like the cheese my mother would send me in a "care package" on holidays. Sharp taste is wonderful, as is the flavor.

    We bought this & the Stravecchio in search of a real provolone mainly to use on our sandwiches especially while great tomatoes are available. At a gathering of 4 people we sliced the cheeses thinly as they might be on a sandwiches. The biggest difference a couple of us found between this Sharp ("house") 2Provolone and the Auricchio is the degree of sharpness; the Auricchio being noticeably sharper than the "house" provolone. But there's no accounting for taste and some of our party felt the "house" cheese was the sharper of the two. So, go figure. We plan on keeping both in stock for future use because they are both quite fine provolones! And our guests were quite surprised at how great Provolones can taste!
