Calamarata Squid Ink Pasta with Shrimp
Calamarata, which is a type of pasta shaped like squid rings, is made with squid ink and served with shrimp

- 12 oz Calamarata squid ink pasta
- 1 dozen large shrimp (peeled & deveined)
- 1 tablespoon extra-virgin olive oil
- 3 cloves chopped garlic.
- 1 small, chopped onion
- 1 tablespoon tomato paste
- 1 package cherry tomatoes (cut in half)
- 12-15 chopped black olives
- ¼ cup white wine
- ½ cup chopped fresh basil
- 2 tablespoons butter
- Red pepper flakes (to taste)
- Salt (to taste)
- Fresh ground pepper (to taste)
- Lemon Wedges
Cook pasta in a large pot of salted water. Reserve ½ cup of pasta water and drain pasta, set aside.
Heat olive oil in a large pan on medium-high heat. Add onions and sauté until soft, add garlic and tomato paste, stir.
Add cherry tomatoes, wine, olives, pepper flakes, salt and pepper. Cook until tomatoes soften creating a juice. Add pasta, butter, and pasta water (as needed). Stir until coated.
In a separate pan, add some olive oil. Cook shrimp until they turn light pink and are cooked through. Add shrimp to pasta mixture along with basil, and plate. Top with fresh lemon wedge.
