Fortuna's Pancetta and Brussel Sprouts - a family favorite
It says it all when our 12 year old grandson asks, if we can have brussel sprouts for his birthday dinner !!
Of course his wish is our dream.....
Crispy Brussels Sprouts and Pancetta
- Wash and trim Brussels sprouts. Slice in half, lengthwise.
- Heat oil in cast iron pan over medium/high heat. Add sprouts to pan. Cook and toss occasionally for 10-12 minutes. (reduce heat if sprouts begin to get dark too quickly)
- Add pancetta to pan and cook 2-4 minutes while stirring.
- Toss all together , add a little drizzle of olive oil on top and serve hot.
- Salt/pepper to taste.
