Yummmm Grilled Eggplant Parmigiana
Shop Ingredients:
Calabrese Pancetta , chopped and lightly sauted until soften
Tomatoes with Peppers , add sauce & tomatoes to cooked pancetta
Fresh Eggplant , peeled, sliced , brushed with light olive oil and grill until soft.
Layer as you would any eggplant parm : Eggplant>sauce with pancetta>Scamorza>repeat
Bake 350 for 20 minutes
