Vantia Sicilian-Style Peperonata is a wonderful Sicilian specialty, a sweet and tangy mix of roasted red peppers enhanced with sweet raisins and nutty pignoli nuts.
Fresh peppers are stewed with garlic, pine nuts and raisins until they reach the perfect fork-tender consistency. They make a fantastic topping on bruschetta and sandwiches, or condiment served alongside grilled chicken and fish.

Whipped Ricotta Toast with Vantia Peperonata

Ingredients :
1thick Slice Sourdough Bread
2 Cups Fresh Ricotta
Zest of half a lemon
Salt & Pepper
A handful of Basil or Parlsey (optional)
Directions: Toast bread until golden brown and crunchy. Drape 3 slices of thinly sliced Prosciutto on bread. This insulates the bread from the ricotta and ensures it remains crunchy.
In a bowl, whip fresh ricotta with honey, lemon zest , salt and pepper.
Spoon whipped cheese mixture on bread, creating divots with the back of a spoon – this will allow the Peperonata to nestle in. Top the toast with Peperonata. If desired, sprinkle with chopped basil or parsley.
Serve immediately. Serve 1
