Patti’s Stuffed Mushrooms
Ingredients:
14 large stuffing mushrooms
1 teaspoon fresh minced parsley
1 Lb.Fortuna’s Italian Sausage
1 large basil leaf, minced
3 closed minced garlic
6 Tablespoons butter
1 small onion chopped fine (approx. 2-3 Tablespoons)
½ cup grated Piave cheese
½ cup Italian flavored breadcrumbs.
Instructions:
Clean mushrooms and remove stems, semi-cook mushrooms in 350 degree oven for about 15 minutes in covered pan until mushrooms are soft and most of the liquid is released.
In a frying pan , place Fortuna’s Sausage (casing removed-just slit casing with knife and remove) Break up into small pieces and stir as cooking.
In a separate sauté pan add all butter, garlic , onion and cook over low heat until soft.
Place in food processor with chopping blade the cooked sausage, cooked onions, garlic and all other ingredients including shredded Piave. Using the pulse button make a fine consistency so it will easily stay in the mushrooms.
Remove the mushrooms from the oven and hand stuff the mushrooms, patting mixture firmly without breaking the mushrooms.
Bake stuffed mushrooms covered for 20-25 minutes in a 350 oven or they can be refrigerated up to one day in advance and then heated.
