Whipped Ricotta Toast with Vantia Peperonata
Ingredients :
1thick Slice Sourdough Bread
2 Cups Fresh Ricotta
Zest of half a lemon
Salt & Pepper
A handful of Basil or Parlsey (optional)
Directions: Toast bread until golden brown and crunchy. Drape 3 slices of thinly sliced Prosciutto on bread. This insulates the bread from the ricotta and ensures it remains crunchy.
In a bowl, whip fresh ricotta with honey, lemon zest , salt and pepper.
Spoon whipped cheese mixture on bread, creating divots with the back of a spoon – this will allow the Peperonata to nestle in. Top the toast with Peperonata. If desired, sprinkle with chopped basil or parsley.
Serve immediately. Serve 1
