It says it all when our 12 year old grandson asks, if we can have brussel sprouts for his birthday dinner !!  Of course his wish is our dream.....  Crispy Brussels Sprouts and Pancetta Wash and trim Brussels sprouts. Slice in half, lengthwise. Heat oil in cast iron pan over medium/high heat. Add sprouts to pan. Cook and toss occasionally for 10-12 minutes. We all have more zucchini than we can eat and need to be creative instead of boring.  So I took some of our Calabrese Pancetta and diced it small and sauted for a couple minutes with a little olive oil .  Then diced up 3 small zucchini and added to the pancetta and let cook on low for about  20-30 minutes- until the zucchini was tender but not over cooked.
