Italian Meatloaf, the best comfort food
INGREDIENTS
1.3 kg of lean ground beef
3 medium eggs
50 g of stale bread
60 g of grated Parmesan cheese
200 g of sliced Fortuna's mortadella
250 g of Auricchio provolone
1 kg of turnip greens or spinach

Pici all'aglione
Pici all'aglione is a typical Tuscan recipe, particularly from the Siena area, made with pici pasta, a thick, rustic type of spaghetti. Pici all'aglione is a very simple recipe to prepare, yet incredibly satisfying. The original Tuscan recipe also allows for chili pepper (if desired).

Zucchini with Calabrese Pancetta
We all have more zucchini than we can eat and need to be creative instead of boring.
So I took some of our Calabrese Pancetta and diced it small and sauted for a couple minutes with a little olive oil .
Then diced up 3 small zucchini and added to the pancetta and let cook on low for about 20-30 minutes- until the zucchini was tender but not over cooked. That's it!!!!

First of the season, swiss chard one of our favorites with cannelini beans and grilled
Italian Turkey Sausage!
Fast & Simple:
While prepping the greens and beans, steam or boil swiss chard (after its been cleaned and cut) - Drain and set aside
Saute a large sliced onion in olive oil with 4 gloves of garlic - Don not brown just soften
Once softened add whole can (juice too) La Squisita Cannelini beans
Lots of fresh ground black pepper, grated Romano cheese

Nduja, Shrimp with Trofie Pasta
No formal recipe here but so simple.
I sauted in olive oil 2 cloves of chopped garlic until browned
Added 1 tablespoon of Fortuna's Nduja
Cooked together for 1-2 minutes until nduja softened and made a sauce.
(Meanwhile cooked the Trofie pasta , drained and cooled)
Then I added 1 lb cleaned and deveined shrimp , pre-steamed chopped broccoli and cherry tomatoes and cooked until tomatoes were softened, approx 5 minutes on med-low heat

I found this great recipe on Nonna's Kitchen & adapted it Fortuna's way. It is absolutely delicious!

Picnic Day - Italian Tuna Pasta Salad
Picnic Day on the Mountain,
We grilled our new Pepperoni Italian Sausage and i made a pasta salad with Maritati Pasta with Sicilian Tuna Celery, onion, carrots and may , even the kids loved it! Our pasta holds up so well in especially in a cold pasta salad. It was a simple great meal & the sun was finally shing.
Topped it off the meal with a Pecorino crisp white wine from Tuscany & fresh cantelope with Fortuna's honey drizzled on top
