Pesto Sauce
INGREDIENTS 2 cups packed fresh basil2 cloves garlic¼ cup pine nuts, pistachio or walnuts2/3 cup extra virgin olive oil½ Locatelli Pecorino RomanoSalt & pepper to tasteINSTRUCTIONS Place basil, garlic, and nuts in a food processor and pulse until coarsely chopped. Add the oil and process until smooth. Season with salt and pepper.
Place in a bowl and mix in the cheese.
Store in an air-tight container.

Italian Cannellini Beans sautéed with Tropea onions and garden fresh cherry tomato's. I just sautéed a lot of onion, and added the cooked cannellini beans I made the day before went out and picked some cherry tomatoes and added and let simmer for about 20 minutes until the tomato's were cooked but not too soft. Add lot of black pepper and served with a mini ball of burratinni and a chunk of crispy Italian bread. You can eat this hot or cold
